Easy-Peasy Peach Cobbler

Do you have a church potluck coming up?  Do you need a quick dessert for dinner tonight?  Try this:

Easy-Peasy Peach Cobbler
9x13 pan
2 sticks butter, melted
2 cups self-rising flour
2 cups sugar
2 heaping T. cinnamon
4 cups or 2 cans peaches

These ingredients can be halved for an 8 x 8 pan.

Melt butter and pour in 9x13 pan
Mix flour, sugar, cinnamon in a bowl.  Add enough water to give consistency of cake batter.
Pour in pan
Pour peaches in on top
Sprinkle top with cinnamon sugar (optional)

Bake at 400 for about 30 minutes or until no longer jiggly.

Butter Dip Biscuits

I found this recipe on The Country Cook and we've been making it ever since.  

At least once a week.  

I know, they're probably not that healthy, but oh so easy and really, really yummy!


I quadruple the dry ingredients and mix them all together and store in the glass jar.  That way, when we're ready for them we just measure out what we need and add the liquids.  

Makes it so simple!

And, QUICK!

DRY MIX RECIPE
10 c. flour
6 T. sugar
5 T + 1 tsp. baking powder
4 tsp. salt

BISCUIT RECIPE w/ MIX
2 3/4 c. mix
1 1/4 stick butter (melted, keep 1/4 stick separate)
1 1/2 c. buttermilk
1/4 c. whole milk

BUTTER DIP BISCUIT RECIPE
1 1/4 stick butter
2 1/2 c. flour
4 tsp. sugar
4 tsp. baking powder
1 tsp. salt
1 1/2 c. buttermilk
1/4 c. whole milk (I don't buy 2% anymore)

Melt the stick of butter (1/2 c.) and pour in an 8" pan.
Melt the 1/4 stick and add to bowl with mix.  
Add the milks.  
Stir until combined.  Will be very sticky. 
Pour on top of the butter in the pan and press it in the pan until covers the bottom.  The butter will come up and over the top.  
Take a sharp knife and score the batter.  You want 9 biscuits.  This allows the butter to seep around the sides of each biscuit.
Bake at 450 for 20-25 minutes.

White Chicken Chili

I know, I know....it's summertime!  
Who in their right mind (there's the kicker! :o) ) would eat chili in the heat of the summer?
But I just can't handle this craving any longer.  

HOT or NOT!!  

We love this "Chili".  It's really spicy and yummy!!
 
And some gave all
I buy the package mix (will be making my own mix, soon) 
and sort of, but not really, 
follow the directions on the back of the package.  


My recipe includes:
4 cans of chicken broth (or 8 cups)
3 cans great northern beans (or 2 qt. jars of home canned)
2 cups shredded chicken
1 pkg. White Chicken Chili Mix

Add all to a pan and simmer for about 30 minutes.  


We eat this with salsa, tortilla chips, sour cream, shredded lettuce and grated cheese.  Yum, yum!!

Sit down and enjoy a scrumptious bowl--or two!
You could even have Patti's Woodsy Winter Day diffuser blend diffusing in the kitchen to bring the wintertime feel into the house while you eat it!

The Easiest, Best, Yummiest Homemade Salsa!



I am making this all the time!  Good thing it's so easy!  Now, the hardest part about this recipe is telling you how I make it.  Cuz I'm really notorious for not measuring! :0)  Just a shake of this and a dab of that...that looks about right.  

So....I'm going to do my best to tell you how I make this.  As you can probably tell, it tastes different every time I make it.  But, it's always good.  

Unless we don't have any cilantro.  And, then it's only mediocre.  I mean, what is salsa without cilantro, right?


Salsa 

1 29 oz. can diced tomatoes (can't wait until I have my own canned tomatoes to use in this!)
1/2 large onion
2 T minced garlic
fresh cilantro
1/2 jalapeno or more depending on how hot you like it
2 tsp. black pepper
2 T Cumin
red pepper (a small shake)
white pepper (a large shake)
Turmeric (a medium shake) optional


Throw it all in the blender until blended well.  If we are eating it right away...I just let the blender go for a while as I cook the meal.  This helps it to blend and get the flavors popping!!  And, we keep the bag of chips (On the Border are the best!) close by and keep tasting it.  You know, that way we know if we need to keep tweaking it.  :0)
 It's always better/hotter the next day.

I did make this batch with the turmeric and that's why it has the orange-y look to it.  In case you don't know--turmeric is bright yellow.

Potato Soup Recipe

This is the best potato soup ever!  I mean it.  I got this recipe from my mother-in-love....have no idea where she got it!  We love it in the wintertime. And....when spring never seems to get here, it's great on a chilly evening like tonight!

I peeled 6 potatoes.  2 were really big, 2 medium sized, and 2 small.  How's that for measurement?  I didn't measure them once I cut them up.  (I'm really bad about measuring....I just say "that looks about right!")  It looked like a little more than normal so, instead of 2 cups of water, I put 3.


This is the onion, carrot, celery, salt and pepper.  I just put them all in the same container and then dump in on top of the potatoes.  I don't usually have the water boiling first.  I was waiting for some celery that Hannah walked down to get from my mother-in-love and just went ahead with cooking the potatoes while I was waiting.

The ham bowl accidentally got in the picture with the butter, milk and cheese. Ham is sneaky!
Added the ham to the cooked potatoes, onions, carrots, and celery.
Then started in another pan to melt the butter, add in the flour with a whisk, slowly add the milk and then boil until it's thick.
Then add the cheese.  Stir until the cheese is melted.
Then add this mixture to the potatoes and oo la la...
The finished pot of soup!
Put it in the bowls and eat to your heart's content....or until the pot is empty!
We ate this tonight with Butter Dip Biscuits from The Country Cook.  I will post that recipe later.

I love to add a handful of raw spinach to the top of my bowl.  I forgot to do that tonight and ate two bowls before I remembered--oops! :0)

Now for the recipe:

POTATO SOUP

2 c. water
2 c. potatoes
1/2 c. carrots
1/2 c. celery
1/4 c. onion
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. cooked ham-cubed
1/2 stick butter
1/4 c. flour
2 c. milk
2 c. grated cheese (I use Colby/Monterey Jack

Bring water, potatoes, carrots, celery, onions, salt and pepper to a boil.  Reduce the heat, cover, and cook until tender.  
Add the ham.

In separate pan, melt butter.  Stir in flour with whisk until smooth.  Gradually add milk.  Boil until it's thick.  Stir in the cheese until melted.  Add to the potatoes.

Yum! Yum!  Enjoy!

Dawn's Cheesy Biscuit Loaf

 I thought I'd start sharing some great recipes with you!  This first one is new to my family.  It's one I've been testing in my kitchen.  We'll see if 3 different tweakings is the perfect fit...

 and...
  YES It was Yummy!

It started out as two different recipes that I found here:
Jim & Nick's Cheesy Biscuits 
Red Lobster Cheese Biscuits (I did not originally find it here...I first saw it on Facebook and shared it to my timeline and printed it out and several people even commented on it....now, it has disappeared--so can't really give credit.)


Anyway....

Dawn's Cheesy Biscuit Loaf
3 cups flour
1 T baking powder
1 heaping tsp. salt
1/8 tsp. cayenne pepper
1/8 tsp. black pepper
3 T Sugar
1 1/2 cups grated Colby/Monterey Jack cheese
1 1/4 cups whole milk
1/2 cup sour cream
3 T melted butter
1 egg

Heat oven to 350 degrees.
Grease 9 x 5 loaf pan.

Mix dry ingredients in a bowl including the cheese.  Mix wet ingredients in a different bowl.  Then, add liquid ingredients to the dry ingredients and mix thoroughly.  Do not overmix.  Place in loaf pan and bake for 50 minutes.

We waited 10 minutes and dug in!  Enjoy!
